  • 1 cup ditalini pasta
  • 1 medium onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • Fresh parsley (for garnish, optional)

Instructions

 

  1. Brown the Sausage – Heat olive oil in a large pot over medium heat. Add crumbled Italian sausage and cook until browned. Remove and set aside.
  2. Sauté the Vegetables – In the same pot, add onions, carrots, and celery. Sauté for about 5 minutes until softened. Add garlic and cook for 30 seconds.
  3. Simmer the Soup – Pour in the chicken broth and bring to a gentle boil. Add the browned sausage back into the pot.
  4. Cook the Pasta – Stir in ditalini pasta and let it simmer for 8-10 minutes until tender.
  5. Add Cream & Cheese – Lower heat and slowly stir in the heavy cream and grated parmesan. Mix well until fully combined.
  6. Season & Serve – Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and extra parmesan if desired. Serve warm.
