Ingredients

·       Dry Ingredients:

o   1 1/2 cups all-purpose flour

o   1 cup granulated sugar

o   1 1/2 teaspoons baking powder

o   1/4 teaspoon salt

·       Wet Ingredients:

o   1 cup (2 sticks) unsalted butter, melted and slightly cooled

o   1/2 cup heavy cream

o   2 large eggs

o   1 teaspoon vanilla extract

o   1 teaspoon lemon zest


Instructions

1.     Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2.     Combine Wet Ingredients: In a separate bowl, whisk together the eggs, heavy cream, and vanilla extract.

3.     Mix Wet and Dry: Gently pour the wet ingredients into the dry ingredients and stir until just combined.

4.     Add Butter and Zest: Fold in the melted butter and lemon zest until just incorporated. Do not overmix.

5.     Chill (Optional): For best results, cover the batter and refrigerate for at least 30 minutes.

6.     Prepare Pans: Preheat your oven to 375°F (190°C). Grease and lightly flour a standard madeleine pan.

7.     Fill Pans: Spoon about a tablespoon of batter into each shell-shaped mold, filling it about two-thirds full.

8.     Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the center springs back when touched gently.

 

9.     Cool and Serve: Let the madeleines cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
