Ingredients

·       Core Ingredients:

o   2 Matjes herring fillets, pre-marinated (in oil or brine)

o   2 Brötchen (German bread rolls) or small soft rolls

o   1/4 medium white or yellow onion, thinly sliced

·       Optional Additions:

o   Fresh dill sprigs, for garnish

o   2-3 dill pickle slices or gherkins

o   1 teaspoon mild mustard

o   1 lemon wedge, for squeezing

o   Herring roe for extra flavor


Instructions

1.     Prepare the Brötchen: Slice the Brötchen (or bread rolls) in half horizontally. Optionally, you can scoop out a small amount of the bread from the center of each half to make space for the herring, or lightly toast it.

2.     Assemble the Sandwich: Take a Matjes herring fillet and place it on one half of the Brötchen, folding it in half if it’s too long. Add a few slices of thinly sliced onion over the herring.

3.     Add Optional Toppings: If using, add fresh dill, dill pickle slices (or gherkins), a small smear of mustard, or some herring roe over the herring.

 

4.     Final Touches & Serve: Complete the Matjesbrötchen by placing the other half of the bread roll on top (if desired), or keep it open-faced. Optionally, add a squeeze of fresh lemon juice or a sprinkle of dill just before serving. Serve immediately for the best taste and texture.
